Paula, very happy to know Studmuffin has accommodations but was hoping for a different location...sigh.

Rainy here this morning. Actually, hope it keeps up as the rain is so desperately needed. Just wish the rain would find its way to the drought areas.

So happy Shirley was able to leave the game early AND was provided room service for dinner. Nice ending for a lovely day.

Congratulations, Sandi.

Bought some DVDs on specific crimes and hope to watch them today. One thing to present a profile but quite another to actually see the individual being interviewed or reenacted.

Off to find coffee and newspaper.

Good morning,

Raining here today. I need to get Hunter off to day camp. His last day. They are having a picnic today--I'm thinking it will be inside. Parents are invited, so I will go in with some mac and cheese. I think it is a good time to use the recipe that I have saved.

Love printing things out on the wireless printer. Just printed the recipe so I can take it to the grocery store.

Good morning everyone. Back from coffee and Dog treats. Dex continues to feel pretty good on this medicine. We enjoyed our walk at the Marina yesterday. Cool once again this morning. We are off for a short ride and a quick stop at the grocery store. HAGD everyone.

Okay, need some help here.

This is the recipe I am getting ready to work with:


Jeff's Mac and Cheese

2 cups (uncooked) elbows- sometimes I do more noodles
1/2 block Swiss cheese (I buy it at Walmart-their brand) (8 oz I think)
8 oz shredded cheddar
1 egg
2 cups cottage cheese
1 cup sour cream
salt and pepper to flavor

Mix the cheeses, sour cream, beaten egg, salt and pepper together in a pan (I use a Pyrex dish at home)

Add the noodles (while they are still hot!) and mix together

Cook at 350 for 25-30 minutes or until nice and bubbly.

Now, Jeff says to use uncooked elbow macaroni, but then he says to put it in while it is hot. I am thinking that I will cook it just a bit, but not too much before adding all of the cheeses and stuff. Opinions?

Not a heck of a lot of time here. I have to get it over there by noon.

Watching the synchronized swimming this morning. Some people make fun of this sport, but you have to say they are working very hard. Does not look at all easy to me.

Shirley, I remember the first time I added uncooked noodles to homemade soup, they completely turned to mush. A friend told me that I should have cooked the noodles before I added them to the soup. So I would say to cook them. BTW, the recipe sounds wonderful - I have been looking for a good mac and cheese recipe - the real kind, not the stuff in a box!

I wish so much that I had more of this kind of time with my grandson James.....he's not getting younger, and neither am I....

So Shirley, would I use 8 oz. of swiss cheese or 1/2 of an 8 oz. block of swiss, which would be 4 oz.?

I had a great mac and cheese recipe from when I was in junior high school home ec. But I made it so many times that my brother got sick of it and threw the recipe away so I wouldn't make it anymore!! =)

Margy, I am sure you are a very good influence on James in the time you have with him.

Glad you enjoy the Hunter Tales. He is a challenge some days, but I am blessed to be a part of his life.

Also Shirley, do you shred the swiss or just cut it into cubes and it melts when mixed with the noodles?

Margy, I agree with Shirley that it's the quality of the time you spend with James, not the quantity!

Yeah, I was wondering about that, too, Sandi. I know they say you should not try a new recipe for guests. I guess especially when you got it from someone who might have worded it a little better, but I am going to give it a try.

I figure the amount of cheese is not as important as the condition of the noodles.

I will let you know. Just hope I do not have to stop at the grocery store and pick up a bag of chips! Gotta go get this thing underway.

GOOD MORNING FRIENDS...

I just read SHIRLEY'S borrowed recipe for Mac & Cheese and it reminds me of a time that GENE did that dish for Thanksgiving. I always made it because my family said, over the years, that I make the very best! Seems Gene saw a recipe in a magazine and wanted to try it. Well...I too don't like to try new things on guests, but, relented so as to give me more time to spend on other dishes.
To make a long story short, family told me that I had OUTDONE myself, that was the best Mac & Cheese I had ever made! :( LOL
So Shirley, I think you are safe with JEFF'S recipe.
Do cook the macaroni first, but not quite done (they will get mushy in the oven cooking).

Making another squash casserole for our Family Friday. Everyone liked it so well, they want it again. We also had fried chicken along with it and Denise's Boyfriend said he LOVES FRIED CHICKEN, but could have made a meal off of the casserole alone:)
Didn't notice if Jayden liked squash or not...he LOVES chickie:)

3 Caterpillars are eating3-5 leaves of milkweed a day...you must have a good supply if you want to raise them. They are active and seem healthy...hope they go into their cocoon stage
very soon.
Did any of you plant the milkweed seed that I gave ypu at our Open House 2 years ago? If not, and you still have the seeds, give it a try!

Judie - how did Frank make out at the Block Party the other night? I bet you didn't have any meatballs returned!

Shirley - best of luck on your mac/cheese. It should be a hit with the kids. I have a niece and my daughter that makes mac/cheese that is out of this world! I used to do all of this cooking when my family was young and all here for the sit down meal - Hubby and I are satisfied with much less.

I have a 2:00 appointment today - hope it isn't raining when I leave or return for that matter.

Mac and cheese is almost done. Smells good. Keeping my fingers crossed that it will be okay. I did not put in any salt, as the other ingredients have lots of it. Did put in some of the crazy mixed-up pepper we have here. Need to get going.

I love you Shirley but I wouldn't eat that mac and cheese.

My mac and cheese is colby or mild cheddar cheese, evaporated milk, salt, pepper, macaroni, and butter.

Jordyn and I went to Saw grass park today It looked like rain when I picked her up and we were going to a church sale and on the way back saw the sign to saw grass park I have heard of the park but never been there There are several eagles nest there so we went It is strictly a nature park no playground but Jordyn did walk the boardwalk trail out to the tower I was surprised a good 1 mile walk in and out she didn't want to leave the tower but had to go poop LOL funny thing walking back the mile she lost the urge Don't you hate that when that happens so we went to Chickfala to eat and the urge returned LOL TMI
We say lots of baby gators, turtles, butterflies all over the place and poor Jordyn was afraid of the dragonflies I picked up a grasshopper to show her they aren't to be afraid off If I could have picked up a dragonfly I would of just to show her tooo She did take a picture of me with the grass hopper will post later on today probably Lots of birds of all kinds was really nice was overcast because of the impending rain but never rained there

I got Jordyn a nice 16"bike barbie princes for 10 not bad and shoes tooo good prices Angie may disown me with all the shoe but some she has to grow in to and some for now for play she got a couple pairs of heal shoes tooo she loves to dress up

Gonna go get he to take a nap now BBIALW

Shirley, pre-cook the pasta. It should only need to be warmed by the cheese sauce. Undercooked will taste hard. Sorry, probably too late and after-the-fact. I'm sure you made the best choice.

Okay, I use a mac/cheese recipe from Cook's Illustrated. Sounds more like Shar's version. It is stove-top but can be put under the broiler with a crumb topping. I use extra sharp cheddar, butter, egg, evaporated milk, tsp mustard.

Hi,

Back from the picnic. The mac and cheese must have been okay. I brought home an empty dish.

Checked the recipe on the macaroni box, and it has mustard in it, as you do, Judie. That sounds like a good idea. I like the sharp cheddar, too.

I got about a tablespoon of the mac and cheese and think that it could use the other 4 oz. of Swiss cheese. I picked up some more ingredients so I can make some for tonight.

Had to practice some deception. Hunter wanted to come home with me rather than stay at camp. I am sure he wanted to play X-Box, and I said no, and that I just might want to go to the hardware store for a wallpaper kit and the mall for clothes shopping, and I was sure he did not want to sit in the store while I tired on clothes.

Considered going to the hardware store, but my ankle is swollen and hurting. When I stopped at the grocery store, I forgot the item I really must have--dishwasher detergent. Will need to stop for that at least. But there will be no clothes shopping.

I hope I will be forgiven for deceiving Hunter.

Okay, now they are doing the rhythmic gymnastics.
